Lucky Charms Cookies


These cookies incorporate two of my favorite breakfast foods: Lucky Charms and chocolate! A typical chewy, buttery chocolate chip cookie recipe gets a twist with white chocolate and marshmallow-packed cereal. Just after baking, sprinkle with additional cereal for extra color and sugar.


Lucky Charms Cookies

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup light brown sugar

1 large egg

½ teaspoon vanilla extract

1 cup all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

2 cups Lucky Charms cereal

½ cup white chocolate chips


Beat together butter and sugars.

Add egg and vanilla.

In a separate bowl, whisk or sift together flour, baking soda and salt.

Add flour mixture to butter mixture.

Mix in cereal and chocolate chips.

Scoop by rounded tablespoon onto parchment-lined baking sheet leaving 2 inches between each cookie.

Move sheet to fridge for about 1 hour.

Bake at 350° F for 5 minutes.

Remove from oven and top with additional cereal, if desired.

Bake for 3-4 more minutes.

Allow cookies to cool on sheet for 2 minutes before removing to wire rack.
