These 5-ingredients smores pies will come together in minutes to satisfy your ooey, gooey, chocolatey, marshmallowy craving with no campfire or oven required. Perfectly portioned into mini pie tins, simply pop them in the freezer for a bit and then pop them right out of the tin and into your mouth!
Chai has been getting into everything at my folks’ house and is terrorizing all the cranky, old cats who live here. She’s so busy! She’s driving her mommy crazy! So, needless to say, I desperately needed chocolate. Using chocolate ganache got me the meltiness I was looking for without the fire. And who doesn’t love marshmallow fluff? It’s fluff! Topping with a whole tiny smore makes the mini pies even more adorable. Everyone knows that mini = cute.

Mini Smores Pies
Mini Smores Pies:
6 mini graham cracker crusts
6 oz high quality bittersweet chocolate, chopped (You can also use semisweet for a sweeter flavor.)
½ cup heavy whipping cream
Pinch instant espresso powder, optional
7.5 oz marshmallow fluff
Mini Smore Garnish:
1 jumbo marshmallow
½ chocolate bar
1 graham cracker
Place the pie crusts onto a tray or plate for easier transport.
Melt together chocolate, whipping cream and espresso powder in a double boiler over low heat, stirring often.
Pour prepared chocolate ganache into pie crusts, filling each about halfway.
Move tray to freezer for about 15 minutes.
Spread marshmallow fluff evenly over top the ganache, dividing evenly among the 6 crusts.
Press one prepared mini smore on top of each pie.
Move tray to freezer for 5 minutes before serving.
Store leftovers in freezer.
Garnish: Break the cracker into 12 rectangles, slice the marshmallow into 3 slices and cut each in half, break the chocolate into 6 rectangles. Assemble into sandwiches.
