So I saw these little plastic to-go cups of some classic store cookie brands and had the most amazing idea… Cookies inside cookies. It’s like the Inception of cookies! This traditional chewy chocolate chip cookie recipe is loaded with crumbs and chunks of Chips Ahoy, Oreo and Nutter Butter cookies. You have to try this!
These tiny cookies, and their original versions, are all products of Nabisco or The National Biscuit Company. Nabisco was originally a conglomeration of bakeries aquired by William Moore in 1889, under the name the New York Biscuit Company. The oldest of these bakeries, Pearson and Sons, first opened its doors in 1792! In 1898, Moore would merge his company with Adolphus Green’s 40 bakery-large American Biscuit and Manufacturing Company. Green was named president of the newly formed National Biscuit Company. The name Nabisco was first used as part of the name for a sugar wafer created in 1901. Nabisco would become the corporate name in 1971. In 2000, Nabisco was bought by Phillip Morris Companies and merged with Kraft Foods.
Nabisco claims that their funky-looking logo, a diagonal ellipse with antenna on top, is an early European symbol for quality. It may be derived from a medieval Italian printmaker’s mark representing the triumph of good over evil or winnowing, separating the grain from the chaff. Popular Nabisco products include Chips Ahoy, Oreos, Nutter Butters, Barnum’s Animal Crackers, Honey Maid Grahams, Ritz, Wheat Thins, Planters Peanuts and A1 Steak Sauce.
Make your own mini cookies!
Mini Cookie Chip Cookies
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
¾ cup light brown sugar, packed
1 teaspoon vanilla extract
½ cup semisweet chocolate chips
Preheat oven to 350° F.
Whisk or sift together flour, baking soda and salt.
In a separate bowl, cream together butter and sugars.
Beat in vanilla.
Beat in eggs, one at a time.
Gradually mix in flour mixture.
Mix in cookies and chocolate chips. (I did this in a stand mixer which crumbled the cookies a bit. You could also crush some of the cookies first and mix by hand.)
Drop by rounded tablespoons onto parchment-lined baking sheet.
Bake 9-11 minutes.
Cool on baking sheet for 2 minutes and remove to wire rack.
