Chai and I are very excited about this post because it’s an amazing, delicious recipe (obviously) but also because it is our 100th post! How exciting! What better way to celebrate than with a birthday cake of sorts? This cheat recipe transforms a few store bought ingredients into rich, chewy funfetti bars with sprinkly frosting-filled chocolate chip cookies in the middle and even more funfetti frosting on top. It’s sure to be a hit any day of the year!

Cookie-Stuffed Birthday Cake Bars

½ cup butter, softened

1/3 cup light brown sugar

¼ cup water

2 eggs

1 teaspoon vanilla extract

15 oz funfetti cake mix

15 birthday frosting-filled chocolate chip cookies

16 oz funfetti frosting

Rainbow sprinkles


Preheat oven to 375° F.

Combine butter, sugar, water, eggs and vanilla.

Mix in cake mix.

Spread half dough in bottom of greased 9×13” baking dish.

Place single layer of cookies on top of dough.

Top with remaining dough.

Bake 30 minutes or until pick inserted in center comes out clean.

Allow to cool completely.

Top with frosting and sprinkles.

  1. Congratulations on your 100th post!!! You’ve come a long way and posted so readily for all this time! I can’t believe you only started your blog in October… your dedication is definitely inspiring!
    This is a fun and playful dessert! The combination of all these different things that I never imagined would go together (cookies + cake mix!) and the extravagance of the finished project remind me of something Christina Tosi would concoct! 🙂

    • Thank you for your thoughtful comment. I can’t believe the results either. I can’t say I was expecting it! I threw myself into the blog after a bad breakup as a distraction, really.
      The recipe is definitely worth a try. It is super easy!
      And wow, what a compliment! Tosi is one of my fav pastry chefs!
