New year, new idea, new start, new recipes.

This month’s theme was ‘Random yet creative’ which called for contributors to share their cooking, any original recipe that they created from anything random they came across in their fridge or supermarket shelves.  In short, just last minute meals, something they throw together with whatever ingredients available.

Here’s the round up of all the creations we received for the month.

We started with sweets.  White Chocolate Cookies to Middle Brownies, Mochi Toasts and Strawberry Shortcake.

Then came the savouries.  Baked mayo cheese mussels and Cosy Winter Soup followed by Potlikker as starters.

The mains included Beef Short Ribs, Quick dinner made with Butter Chicken Sauce while on the move and Student’s style ‘seafood’ fried rice.

Not only are these yummy peanut butter blondies topped with chocolatey chunks of Butterfingers, they are also filled with them. These treats are a gift for one of my coworkers who will be leaving CVS this week to focus on her full time job and the care of her elderly father. We will miss you, Tiffani! She’s constantly buying Butterfinger and Reese’s candy from me when we work together so I developed this recipe specially for her.

I think I’ve been clear in a couple previous recipes about my obsession with matcha green tea powder. I’ve seriously never tasted anything like it (in a good way)! I was looking online for a recipe combining matcha with a typical American chocolate chip cookie recipe. No luck! All those wimpy recipes called for 1 teaspoon or 1 tablespoon of matcha. I want all the matcha flavor! You can tell that these cookies definitely have it by their odd seaweedy coloring. These thin cookies are crispy on the outside and chewy on the inside and packed with dark and green tea-flavored chocolate chunks.

I have been a fan of tapioca pudding since I was kid. For some reason, those little fish egg-looking chewy bits always appealed to me. Much later in life, I discovered a sweet Taiwanese beverage that combines 3 of my favorite things: milk, tea and tapioca. What the heck? Why has no one told me about this before? Bubble tea, also known as boba milk tea, has a shaken until frothy tea and milk or fruit base plus chewy tapioca pearls or fruit gummies. There are many different possible flavors. The version shown here uses chai tea, vanilla soy milk, vanilla extract and large pearl white tapioca.
