I eat plain Chobani Greek yogurt every day. For some reason, it doesn’t bother my tummy even though I usually can’t tolerate dairy. I do my best to switch up the mix ins to keep my breakfast interesting. This parfait really captures the flavors of the season with pumpkin puree, pumpkin pie spice, graham cracker crumbs and my PSL granola LINK. It is a healthy and filling breakfast, snack or dessert that you can whip up in minutes. It really does taste just like a slice of pumpkin pie! You could make this up in bulk as a light alternative to the traditional pie after Thanksgiving dinner, Americans’ biggest and most calorie-laden meal of the year.
I’ve pictured this parfait in the typical layered, pretty form but you could just dump everything in a bowl and eat it like that. Who cares about presentation? Do starving kids in Nicaragua care about presentation? Heck no! You know what they care about? Eating. You know who helps them do it? You and me, through a fund-raising campaign called Snap Your Snack. Just snap a selfie of you snacking on something healthy, donate if you can, and spread the word. The campaign has just 18 days left to reach 6,600 pounds. So get in the holiday spirit, eat some food and give some other people some food! Was that the best segue ever, or what?
Pumpkin Pie Parfait
½ cup plain Greek yogurt (You could also use vanilla Greek yogurt and eliminate the vanilla and half the honey. Sub soy or coconut yogurt for vegan option.)
½ teaspoon vanilla extract
2 tablespoons honey, divided (Sub agave for vegan option.)
½ cup canned pure pumpkin (You could also use canned pumpkin pie mix and eliminate half the honey and the spices. It just won’t be as good for you and you’ll have less control over the taste.)
1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon, ¼ tsp each nutmeg and ginger)
2 tablespoons graham cracker crumbs
2 tablespoons PSL granola
Whipped cream, optional
Combine yogurt, vanilla and half of the honey.
Combine remaining honey, pumpkin and spices.
Layer half of the yogurt, pumpkin mixture, graham cracker crumbs and granola in bowl or container. (Layer in a jar with a lid the night before and you’ll have a yummy grab-n-go breakfast in the morning!)
Repeat with remaining half of ingredients.
Top with whipped cream and additional crumbs and granola, if desired.
